VitiRosé project

Origin :

Since Rosé has become a wine « in its own right », and that it is no longer a « default option», and we apply a specific vinification, we realize that the quality of the grape holds a decisive place in the process of elaboration. So we understand how much the type of wine growing can be important, and that we cannot handle a vine in the same way as for white wine, red wine or rosé wine.

Objectives :

The aim of this project is to find a complete itinerary of vine handling which is adapted to the production of a defined objective « rosé wine », in a changing climatic context and with less input.

Application :

L’étude est composée de deux actions :

• Action 1 : Acquisition of data
  The first phase enables the establishment of a link between the composition of the wine and that of the grape. A second phase enables the establishment of a link between the composition of the grape and the winemaking levers that influence the composition of this grape and its mode of action.
• Action 2 : Implementation of systemic experimentation
  The first phase enables us to test the innovating itineraries on the vine. These already exist among the winegrowing partners, and have been compared with the classical itinerary of winegrowers.
  The second phase enables us to test systemic itineraries which are innovative within a less constraining framework : trials on resistant grape varieties, innovating pruning methods (minimal pruning, close and precise pruning), density of plantation outside the AOC framework …
